Bones are made of extremely small crystalline particles of carbonated hydroxyapatite, held together (sort of) by collagen fibers – it’s the collagen that makes bone stiff and strong, and it’s the mineral that allows them to resist compression and actually hold things.

Fudge is made of extremely small crystalline particles of sugar, held together (sort of) by a mixture of oligosaccharides, fats, water, and other goodness – it’s the sugar that makes fudge dense and rich and smooth, and it’s the other stuff that makes fudge fudge instead of rock candy or powder.
